I’m a sucker for the novelty Oreo’s. My absolute favorite are the birthday cake Oreo. They are in my opinion better than the originals. The red velvet also come in a close second. It seems Oreo comes out with a limited edition flavor almost every month now!

Sometimes I can’t even find the packages at the store because they’re so popular. It’s rare that I’ll buy a package just to eat. I love to bake with them. I was going to a BBQ where there would be a lot of kids so I thought they would love cotton candy cupcakes with the Oreo in the middle.

I must be getting old because I found these cupcakes almost too sweet to eat! I never would have said that when I was a kid. I kept the recipe very simple. I used a vanilla cupcake and frosting recipe from Joy of Baking and tinted the cake batter blue and the frosting pink to match the cookies. Place one scoop of batter in the case, followed by the Oreo and then another small scoop of batter on top before baking.
